I have a 1.5TB Samsung drive which i recently plugged in after not using it for a while
I did get a warning message about a huge power load issue when trying to turn on many drives connected to my computer at once and the PSU could not handle it but that was years ago
The health seems to stay constant
But the "performance" percentage drops 1% every single day; what does this mean?
I have the drive connected to a docking station; could that be the issue?

Yes, it can also cause the troubles. Generally anything "between" the computer and the disk drive can cause such communication problems:
- cables
- connections
- possible cable extenders, hubs
- docking stations
If possible, I'd recommend to try connecting differently - by different docking station/adapter or directly to a SATA port.
